Mooncake Making Workshop

Mid-Autumn Festival celebrates family reunion under the year's fullest moon, and there's no celebrating it without mooncakes on the table. In this hands-on workshop, pastry chef Cindy Yuong of Sweet Dream Bakes teaches you how to make two very different styles from scratch: a buttery, shortbread-style baked mooncake, and a soft, chewy snowskin mooncake that skips the oven entirely.

For the baked mooncakes, you'll make a homemade black sesame filling that is thick and toasty, and a red bean filling that is rich and creamy. Choose either one, with an optional salted egg yolk center. For the snowskin mooncakes, you'll whisk a smooth custard base and flavor it vanilla, matcha, or chocolate. Cindy shares her signature technique for coloring both doughs naturally, then marbling two or three colors together so the pattern comes out different every time, even within the same batch.

From there, the rest is yours to design. Pick a mold and a color pattern for each mooncake: a traditional round mold gives you the classic look, while the more modern molds turn the same dough into something else entirely. Cindy checks in on everyone's marbling and molding along the way, so you'll know why a color turned out the way it did and how to adjust it on your next one.

You'll also learn how to turn the baked mooncake dough into shortbread cookies, plus how to store, gift, and serve everything once you're home. Once the baked mooncakes come out of the oven, everyone sits down for tea while they cool, and Cindy shares the traditions and stories behind Mid-Autumn Festival and mooncakes. You will take home 9 handcrafted mooncakes (3 baked and 6 snowskin) in a beautiful gift box.

This class is taught by Chef Cindy Yuong. Cindy Yuong is a Seattle-based pastry chef and founder of Sweet Dream Bakes, creating thoughtful desserts and experiences inspired by culture, creativity, and connection. With over 10 years of baking experience, training at the Culinary Institute of America, and specialty baking classes in Asia, she brings both technical skill and an artistic approach to her work. She shares her creations through pop-ups, custom cakes, and hands-on classes designed to feel calm, approachable, and meaningful.

Modern Baked Mooncakes:

During this class, you'll learn how to tint dough naturally and marble two or three colors together to create your own one-of-a-kind mooncake design. Using hand-kneading, natural food coloring, and a variety of molds, you'll build pattern, color, and shape into both your baked and snowskin mooncakes.

The small-class setting means everyone is encouraged to ask questions and talk through variations, different color combinations, filling swaps, mold choices, so what you learn here carries over easily into your own baking at home.
