Cantonese 4-course Meal

This 2-hour online class is the perfect introduction to basic Chinese cooking methods, traditional flavors, and what a weeknight dinner for two would look like in a typical home in Hong Kong. You'll learn a total of 4 courses, including how to cook the perfect jasmine rice in a simple pot without a rice cooker. This class will introduce you to different Chinese cooking techniques that require no special tools, including stir-frying, steaming, and stewing.

The class is interactive, full of amazing family and personal stories, and uses easy-to-find ingredients to immerse you into a cultural and epicurean trip to Hong Kong. Even though almost every family in Hong Kong has a rice cooker, I'll teach you an easy way to cook the perfect Steamed Jasmine Rice (蒸白飯) with just a simple pot. While that's steaming away, we'll prepare an easy way to make the classic Soy Sauce Chicken (豉油雞) in a stew. That dish needs to be slow-cooked to perfection so while we wait, we will make the Stir-fried Bok Choy with Garlic (蒜蓉白菜) and my mom's favorite 15 min soup with Fresh Tomato, Tofu, and Cilantro (蕃茄豆腐滾湯).

What you need.

You’ll be cooking a meal for two adults. Simple double everything to scale up. You will receive a confirmation email with this list, plus additional notes on substitutions and tips on joining a Zoom online cooking class.

Full Menu:

  • Steamed Jasmine Rice 蒸白飯

  • Soy Sauce Chicken 豉油雞

  • Stir-fried Bok Choy with Garlic 蒜蓉白菜

  • Fresh Tomato and Tofu Soup 蕃茄豆腐滾湯

 

Ingredients:

  • Jasmine White Rice, 1cup

  • Chicken Drumsticks with Skin, 1.5 Pound

  • Light Soy Sauce, 2 TBSP

  • Dark Soy Sauce, 1/2 Cup

  • Chinese Shaohsing Rice Wine, 3 TBSP (or dry sherry)

  • Rock Sugar, 2 TBSP (or regular or brown sugar)

  • Baby or Shanghai Bok Choy, 1.5 Pound

  • Garlic, 2 Cloves

  • Roma Tomatoes, 2 Medium

  • Soft Tofu, 1/2 Pack

  • Cilantro, 1/4 cup chopped (or scallion)

  • Chicken Broth, 1 Cup (or 1 tsp of Chicken Bouillon Powder)

Kitchen Setup:

  • 3 Medium Pots with Lid

  • Wok or Large Frying Pan with Lid
