The Perfect Mochi

Mochi (糯米糍) is a popular dessert in Asia, best described as a sweet rice dough that comes with a wide array of fillings. During this class, I will share with you Mama’s secrets for fabulously fluffy mochi that stays soft for days, even after you freeze them! To demonstrate the process and recipe within the given time, rather than using the traditional method of steaming, I will teach you a useful hack of using the microwave to prepare the dough. While there are many filling options, we will stick with one of the traditional fillings - store-bought Red Bean Paste - so you could learn Mama's other secret of how to create the mochi without having it stick to everything.

The class is interactive so we will have lots of time to practice making the mochi, discuss the traditional way of steaming the dough, and talk about all the different flavor options and techniques for the dough and fillings. You can make mochi with fresh fruit, peanut butter, black sesame paste, and of course ice-cream! As always, I will share fun cultural tidbits and family stories to make this a full immersion experience. Hope you will join me!

What you need.

This recipe is for 15 mochi. You’ll receive a more detailed list of all the ingredients and kitchen setup via email once you have signed up for the class. Here’s a quick overview of what you need.

Ingredients for the dough:

  • Glutinous rice flour, 8 ounces

  • Wheat starch, 1 tablespoon

  • White sugar, 1/2 cup

  • Canned coconut milk, 6.5 fluid ounces

  • Milk, 3/4 cup

  • Vegetable oil, 1 tablespoon

 

Ingredients for the filling and coating:

  • Red bean paste, 1/3 cup

  • Glutinous rice flour, 2 tablespoon

Kitchen Setup:

  • Medium-sized mixing bowl

  • Whisk

  • Medium-sized microwave-safe serving dish

  • Saran wrap (or plastic wrap or cling film)

  • Cupcake liners (or wrappers)
