Classic Egg Fried Rice

Chinese-style fried rice is a versatile dish that can be a humble makeover of leftovers, or a fancy carrier of the most expensive ingredients. I have created a Fried Rice Masterclass to help you master this dish with two key concepts so you could avoid common mistakes, such as mushy rice, and build confidence to create any combination for the fried rice that you will love.

First thing first, the easiest path for a successful fried rice is leftover rice. Follow this recipe to create the best steamed jasmine rice for your fried rice.

A few extra tips on the recipe:

  • You could definitely replace the luncheon meat with spam, char siu, Chinese sausage, leftover deboned rotisserie chicken, ham, fried tofu…The list is endless!

  • I purposely kept this recipe super simple with no additional soy sauce and fish sauce for flavoring so you could experience the cleanest version of what a classic egg fried rice could be. Of course you could add more to taste but sometimes less is more.

Classic Egg Fried Rice

  • Prep to Serve: 30 minutes (not including time for leftover steamed rice)

  • Cleanup: easy

  • Freezes well

  • Serves 2 people

Must have ingredients:

  • 2 cups leftover white jasmine rice, room temperature

  • 1/2 can luncheon meat or spam

  • 3 eggs

  • 1 scallion

  • 1/2 teaspoon salt, plus more to taste at the end

  • 3 tablespoons vegetable oil

Steps:

Chop luncheon meat into small cubes and set aside. Crack the eggs into a small bowl, add 1/2 teaspoon of salt and lightly beaten it. Chop scallion and set aside.

In a wok on medium-high heat, add 1 tablespoon of oil and pan fry the luncheon meat until slightly brown. Remove from wok and set aside.

Add 2 tablespoons of oil and cook eggs until 80% cooked. Add rice and stir fry until eggs are cooked and rice has been heated through, about a minute or two. Add luncheon meat, scallion, and pinch of salt to taste and stir fry for another 30 seconds. Serve while hot.
