Asian Baking Skills with Miniature Cupcakes
Whether you're just beginning your baking journey or you're an experienced cake enthusiast looking to expand your skills, this hands-on class offers a flavorful introduction to the world of Asian baking. Led by award-winning pastry chef Winnie Au, you'll learn how to craft Miniature Chiffon Cupcakes topped with silky, Asian-flavored Swiss Meringue Buttercream Frosting.
This isn’t your average cupcake class. You’ll be working with chiffon cake, known for its ultra-light, airy texture and subtle sweetness—an ideal base for showcasing bold and unexpected flavors. Chef Winnie will guide you through the process of mastering this delicate cake, creating smooth and stable Swiss meringue buttercream frosting, and exploring a variety of piping and decorating techniques (and surprises!) to elevate your cupcakes into edible works of art.
You will start the class by baking vanilla-flavored chiffon mini cupcakes. While they are cooling, you’ll experiment with a range of unique flavor combinations for the frosting. Indulge in the rich, savory-sweet notes of the fan-favorite Cheesy Salted Egg Yolk, enjoy the earthy and tropical pairing of Ube Jam with Coconut Flakes, and surprise your palate with the spicy-sweet fusion of Gochujang Caramel. You’ll also explore the fragrant and fruity blend of Pandan with Fresh Mango — a flavor combo that captures the essence of summer.
By the end of the class, you’ll leave with a dozen of beautifully decorated mini cupcakes, a deeper understanding of Asian baking techniques, and the confidence to create your own flavor combinations that go far beyond the ordinary.
Your instructor, Winnie Au, brings a wealth of knowledge and a love for sharing culinary expertise. With a Bachelor of Education in Home Economics and years of teaching experience in Hong Kong and the U.S., Winnie specializes in Asian cuisines and pastry arts. She has honed her skills through numerous baking and cake decoration programs, as well as international qualifications in cake decoration and handcrafts across the U.S., Canada, and Hong Kong.

During this class, we will prepare and cook from scratch all 5 courses on the menu.
Throughout the process, we will pause to introduce new and lesser-known ingredients that are easily found in the greater Seattle area.
The small-class setting means all students are encouraged to ask questions and discuss potential variations for each dish that will make it more accessible and adaptable in everyday cooking.
