In this immersive, hands-on class, you’ll unlock the secrets to recreating this legendary dish in your own kitchen. We begin by mastering two gentle cooking techniques that yield silky, succulent chicken, along with essential knife skills on how to debone and serve a whole chicken. Then, we turn our attention to the rice—fragrant, glistening grains infused with garlic, ginger, and rich chicken broth, forming the flavorful foundation of the meal. No chicken rice experience is complete without its signature trio of condiments. You’ll craft each one from scratch: a fiery chili sauce, a warming ginger paste, and a savory soy seasoning. To round out the dish, we’ll prepare a clear, comforting broth that brings everything together in a warm, satisfying embrace.
Throughout the class, you’ll not only refine your culinary techniques—like knife-handling, broth-making, and flavor balancing—but also explore the cultural heritage behind the dish. This class is taught by Pam YeoCo. Pam is a Southeast Asian chef and food researcher with honors in French culinary arts from NYC. With years of experience in catering and private chefing, she blends strong technical skills with a deep respect for tradition, curiosity, and bold global flavors. Her cooking philosophy is rooted in sustainability and storytelling—food as connection, culture, and play. In her engaging classes, Pam shares intuitive techniques, nutritional insights, and essential kitchen foundations with warmth and no gatekeeping. Beyond the kitchen, her passions span wellness, urban farming, lifestyle styling, and art, all of which inform her vibrant, holistic approach to food.

During this class, we will prepare and cook from scratch everything on the menu.
Throughout the process, we will pause to introduce new and lesser-known ingredients that are easily found in the greater Seattle area.
The small-class setting means all students are encouraged to ask questions and discuss potential variations for each dish that will make it more accessible and adaptable in everyday cooking.
